Где-то слышал, что на страничке Adobe есть возможность конвертнуть PDF в TXT например. Искал, но видимо плохо, ничего не нашёл...

Есть вообще там такое или я чего-то путаю...

Или может какая утилита сделает что-нить подобное?

А текст из PDF можно вытянуть с помощью Adobe Acrobat. Можно как картинки сохранить странички в Photoshop или Illustrator (открыть в них pdf).

ОТСЮДА попробуй переписать Adobe Acrobat, откроешь в нём файл pdf, выберешь Text Tool и выделишь им весь текст, скопируешь и вставишь куда захочешь.
